Choose Update and iTunes will try to reinstall iOS without devouring all your data. You should be asked if you want to Restore or Update your iPhone. Press and hold both the Sleep/Wake and Home button for at least 10 seconds, don't release them when you see the Apple logo, keep holding the buttons down until you see the recovery mode screen. While it is connected you must force restart it. To enter Recovery Mode you must switch your iPhone off and connect it to your computer.

Hopefully you have a recent backup in iCloud or on your computer. The bad news is that doing so erases everything – all the data – on your iPhone. If nothing’s worked, then you might want to put your iPhone into Recovery Mode. Once you’ve done so you can continue with the Restore operation.
